How much damage should a cannon do? It's the type that would be on a large battle ship? I guess it scatter randomly to hit to be fair?

there were a lot of different types of cannons and shots that they fired. A quick way to do it is to have a single ball cannon be a line and deal something like 6d6. For those with grape shot I would say a cone for 6d6.

they also had the shrapnel ones that were used that could be a burst effect at a set distance.

I vaguely remember there being a book on industrial age D&D weapons. Cannons, muskets, etc....

Maybe 6d6 for the grapeshot. For the ball, it needs to be more like 20d6, at least. IMO a dragon should be at least a bit concerned about being shot with a canon. When it hits a ship, it's still only going to damage 5' sections (because that's how damaging big objects works in D&D), but it should pretty much kill anyone that gets hit by it directly.

There were all sorts of shot for all sorts of purposes!  I was looking for what is known as "chain shot" when I came across this guy:

That's the sentiment you can use with huge blocks of stone hurled by large catapults and those deal 6d6 damage as per page 99 of the DMG.

Note that I do agree with you and think those things should deal more damage.

+++EDIT+++

Page 103 in Stormwrack have the following:
Quote
The light bombard—also known as the perier or stone
gun—is a relatively short and light piece designed to fire
round stone shot with small charges of powder

Quote
The heavy bombard is sometimes referred to as a basilisk.
It fires a heavy stone ball with a modest charge of powder.

Sounds like cannons to you?
It does to me.

Damage?

3d10 or 6d10.

Is stormwrack a good resource book for sea related material?

It is kinda the whole point of the book. I still don't know if it is good at it, but that was the purpose of the book.

Cool, I need the crash course in boat rules because I was a little unprepared for the boat seizure! I honestly thought they'd stay and fight not nab the boat and flee. I have some fun plans for it though, not only is it haunted but it's an intelligent being that gives them a hard time and has a big attitude! It will give me a chance to do some silly voice and include some comedy.
