There's a chart somewhere.  As for the Kaka clan, they're probably trying to appeal to a wider audience by hiding their faces - we don't know if Tao looks like Kokonoe or Jubei under that hood, or even if she has ears.

Jubei's face is easier to see than Tao's. He clearly has more feline in him than Kokonoe, but that's because she is a half-breed to begin with.

Less than. The only fur visible on her is on her tail and ears. She's a bit more feline than the 10% due to the mouth. She's also more human in personality (sort-of).

Well, Renamon's a weird case, since her digievolutions take her from something like 70% -> 100% -> 50% -> 0%; at full power she doesn't qualify for the fight any more.
