I'm one of the only people I know who enjoys Hemingway. Yes, you have to almost literally chew through it, but I do enjoy his stories. The Old Man and the Sea was a great read.
I didn't care for the Sword of Truth series. I got really bored reading it, and it seemed like a rip-off of a lot of Jordan's concepts and ideas.
